Comparative efficacy of citric and malic acids as coagulants for paneer manufacture

Malic and citric acids were compared for their coagulant capability in paneer manufacture. Malic acid resulted in a significantly higher moisture retention in paneer than did citric acid. Malic acid paneer had lower fat and TS losses in whey.
