Food-borne diseases caused by Salmonella enteritidis, Campylobacter jejuni, Escherichia coli O157, Vibrio vulnificus, Listeria monocytogenes, Yersinia enterocolitica, and Cyclospora cayetanensis are reviewed. Factors contributing to the emergence of foodborne diseases such as human demographics and behaviour, industry and technology, travel and commerce, microbial adaptation, economic development and land use and deterioration of public health infrastructure are discussed.
