Lycopene: chemistry, biology, and implications for human health and disease

Nutrition Reviews 56(2): 35-51

The chemistry and biology of lycopene and its implications for health and disease are discussed. Tomatoes are the main source of dietary lycopene, which is one of the major carotenoids in the diet of North Americans and Europeans. Recently published epidemiological studies have implicated lycopene in the prevention of cardiovascular diseases and prostate and gastrointestinal tract cancers, benefits that may be attributable to lycopene's unique structural and chemical features. Recent findings regarding lycopene's bioavailability, excretion, and biological actions in experimental animals and humans are discussed, as are the associations between lycopene consumption and human health.
