On the purpose of enriching a corn cheese snack, with fibre and carotenoids from carrots (Daucus carota), the processes of elaboration of carrot flour and extrusion were studied. Snacks with 5, 10 and 15% of carrot flour were chemical evaluated and an increase of dietetic fibre and carotene was observed.
