Melon: three years of sensory analysis

Over a 3-year period, from 1995 to 1997, CTIFL at Balandran, France, conducted a study involving sensory analysis of melon fruits. During the first year, the study mostly involved the identification of various descriptive criteria and an attempt to adapt analytical methods to the product. The second year was spent clarifying certain points and arriving at a more precise definition of the descriptive criteria.
