Metabolic control of wall properties and its implication to the texture of plant-derived food

The elucidation of metabolic control of texture in plant-derived foods was investigated in beetroot and sugarbeet. Of particular interest was diferulic acid (which has a 5-5 linkage) and dihydroferulates which have been implicated in the thermal stability of cell adhesion and texture in Chinese water chestnuts. Suspension cultures of beetroots and young sugarbeet seedlings were fed with labelled 14C-cinnamate and uptake was monitored.
