Application of monitoring and control according to HACCP (Hazard Analysis and Critical Control Points) is studied in the flour milling and pasta production industries. The HACCP directive is discussed with respect to the industry encompassing risk assessment, determination and monitoring of critical control points in production. A list is given of insect and rodent pests in the flour milling and pasta industry.
