Psychrotrophic and total bacterial counts in raw milk

The current Czech standard allows total bacterial counts of 100 103 and 50 103 per ml for standard and high-quality milk, respectively. Several screenings revealed that the requirement of the standard was met in 96% of milk supplies. Tests of 3 sets of bulk milk samples demonstrated significant correlations between total and psychrotrophic bacterial counts (r=0.91 to 0.96). The standard limits for total bacterial counts correspond to 24 103 and 12 103 psychrotrophic bacteria per ml.
