Production and demand for organic products has been steadily rising and in 1998 about 2% (390 000 ha) of Germany's agricultural area was devoted to such production. The German study first examines the changing pattern of demand: consumer household types, incomes, ages, education, motivation, preferred products, effects of trade marks, etc. It then examines the production, processing and retail distribution under cereals, milk, meat, fruit and vegetables, potatoes and fish.
