Cheese ripening: report on the new Gruyere ripening store at Vuisternes-en-Ogoz in Switzerland

Storage conditions for Gruyere cheeses in a new store build in 1998 are described. Cheeses are stored for 5-10 months at 8-14 degrees C and RH of 88-96%.
