It lasted 30 days and contained all meals offered during one day, except beverages. Analysis werde done by the AOAC method. The total amounts of dietary fibre were between 15.9 and 22.2 g/day, based on the assumption, that all the offered meals were consumed. The three kitchens offered generally varied meals.
