Instruments for testing heat stability of milk and other aspects of milk quality



Molochnaya Promyshlennost' ( 3): 21-23



Two pieces of equipment developed in Russia for milk testing are described with reference to their design, technical specifications, calibration and utilization. The 'Termol-1' device (IST, Saint Petersburg, Russia) is used to assess heat stability of milk, and comprises a heating element and a packed column containing an orifice which restricts the passage of coagulated milk protein. The temperature of the milk sample is gradually increased until coagulation of the milk protein occurs.
