Intake of sweeteners, physiological and nutritional aspects



International Sugar Journal 103(1232): 346-351



An overview of the nature, characteristics and use of various substances that confer a sweet taste is presented. These substances have different molecular structures, can be classified as natural or artificial, may contain calories and do not provide the same sweet taste. The differences in tastes among sweeteners are discussed in the context of the physiology of the sweet taste's transduction.
