Interaction of beta -casein at an emulsion interface studied by 2H NMR and molecular modeling

Magnetic resonance in food science: a view to the future Proceedings of the Second International Conference on Applications of Magnetic Resonance in Food Science, University of Aveiro, Portugal, 18-20 September, 2000: 193-201

Typical H NMR (Nuclear Magnetic Resonance) were obtained when beta -casein interacted with neutral or charged liposomes. Solid-state H NMR was a useful tool to describe lipid- beta -casein interaction. The results observed indicate the ability of this protein to interact with both non charged and charged lipid phases.
