Occurrence of pink discoloration in Grana cheese made with a single-strain starter culture

A pink discolouration, which occurs in Grana cheese with a more intense ring under the cheese rind, seems to be associated with the biochemical behaviour of the Lactobacillus helveticus used as starter culture. The Lactobacillus helveticus strain employed for this cheese production was isolated from the natural whey culture usually used during daily Grana cheese production, being one of the dominant strains.
