In a 9-week study, 76 healthy adult volunteers (44+or-11 years old), with baseline plasma total cholesterol (C) levels <8 mmol/litre, received in a balanced, double-blind, crossover design, 3 different table spreads. Two spreads were fortified with free (non-esterified) vegetable-oil sterols, mainly from soyabean- or sheanut-oil sterols (31 and 133 g sterol equivalents/kg (0.8 and 3.3 g/day), respectively). One spread was not fortified (control).
