The bacteriological quality of 105 samples of 'coagulated' cheeses (a local renneted fresh cheese, manufactured from whole or skim raw milk) marketed in the city of Recife, Pernambuco State, Brazil, was evaluated with particular reference to the presence of Salmonella spp., Staphylococcus aureus and coliforms. The samples originated from 15 counties of Pernambuco.
