Use of the SE-HPLC analysis of prolamin storage protein to predict breadmaking quality in winter wheat varieties

Storage non-functional prolamin protein of wheat grain endosperm is a protein producing an amino acid pool for germination and new plant growth. From this protein, a gluten protein complex is formed during the flour hydration and mixing process associated with dough production and plays a crucial role in breadmaking quality of wheat grain due to its viscoelastic properties.
