Bacteriological evaluation of Minas frescal cheese for pathogenic organisms of public health importance: Staphylococcus aureus, Salmonella sp. and faecal coliforms

This study provides a bacteriological evaluation of Minas frescal cheese. 20 samples obtained in several commercial establishments of the Municipal District of Rio de Janeiro, Brazil, during the period of November to December 2001, were analysed. 18 were positive for faecal coliforms, 2 were positive for coagulase Staphylococcus and none of the samples showed any specimen of Salmonella.
