Benzoic acid and sorbic acid preservatives - a review

Preservatives are food additives that serve as antimicrobial agents, which inhibit the growth of yeasts, moulds and bacteria. Benzoic and sorbic acids and their respective sodium, potassium and calcium salts are among the most commonly used in Brazil.
