Inactivation of Escherichia coli by pulsed electric field treatments (PEF) between 15 and 28 kV/cm in citrate-phosphate McIlvaine buffer (pH 7, 2 mS/cm) was studied. At all electric field strengths investigated the shape of the survival curves was concave upwards.
