One hundred and eighty pigs, females and castrated males, from three genetic types: Large White x Pietrain (LW x P), Large White (LW) and Duroc, were compared for "Bayonne" ham production potential. The quality of carcasses, fresh meat and cured ham were studied. Growth characteristics, as well as carcass composition, yield and meat colour were not significantly different between the LW x P and LW genotypes.
