The heating of liquid and particulate foods by a 40.68 MHz, 30 kW continuous flow Radio Frequency (RF) unit was studied. Temperatures at two locations at the exit of the RF unit were measured during continuous heating and were found to be close to one another when water was used as the product. Temperature profiles of cut sections of particulates (small whole carrots, potato cubes, and carrot cubes) were determined using an Infra-Red camera.
