The present study dealt with the conversion of cysteate (Cys-SO3) into taurine in the liver of fish. Livers were collected from live fish and frozen at -20 degrees C until used. Liver homogenates were prepared and amino acid analysis for the enzyme activity was performed. The taurine content formed during the incubation was calculated on the basis of area ratio by comparison with beta -alanine and considered as the enzyme activity.
