Dietary essential fatty acids (EFAs4), linoleic acid and alpha -linolenic acid are converted to long-chain polyunsaturated fatty acids (LCPUFAs) by desaturase and chain-elongation enzyme systems. The LCPUFAs are important because they serve as eicosanoid precursors. In addition, several LCPUFAs have specific structural and functional roles in development or maintenance of neural tissues such as brain, retina and other tissues.
