As a major soyabean producer, Brazil finds it important to characterize the isoflavone composition of those cultivars of greater agricultural relevance and to investigate the effect of the temperature of extraction on the isoflavone content. At 25 degrees C, the IAC Foscarin 31-1 cultivar exhibited a mean total concentration of isoflavones of 1405 micro g/g, while IAC 15-1 showed about 3008 micro g/g.
