Sensory analysis of milk was performed to determine whether the diet of cows may modify sensory properties of raw milk. The first approach involved discriminative tests (triangular tests) between two whole raw milks collected from groups of cows receiving different diets. The panel was able to discriminate milk from cows fed pasture and milk from cows fed hay-based (P<0.001) or high concentrate (65%) diets.
