European marine fish farming focused on the couple sea bream and sea bass. Species diversification is sustained by a better adaptation to local environments, to rearing techniques recently developed and to the new market trends, but also by an increase in rearing performance. Sea bream and sea bass have been chosen taking into account a limited number of parameters.
