In an experiment 21 fattening pigs were divided into 3 groups and fed with complete (control group - I) feed, containing supplementary oil at 4% of the mixture (group II) or diet containing oil and sodium ascorbate at 0.3% (group III). After slaughter, blood samples were collected and the concentration of malondialdehyde (MDA) in blood serum was determined. In the sampled backfat, the percentage content of fatty acids was determined by chromatography.
