Effect of environmental factors on the growth of lactose fermenting yeasts (LFYs) in whey based medium

Utilization of paneer whey ultrafiltrate to produce lactose fermenting yeasts (LFYs) biomass was investigated, using five strains of LFY, under shake flask cultivation conditions. The effects of various environmental factors such as pH, incubation time and temperature, inoculum level, agitation and aeration were studied to optimize the conditions for maximum growth of LFY in whey permeate medium.
