This study evaluated the effect of regulated deficit irrigation and linear irrigation strategies applied to olive tree (cv. Arbequina) on chlorophyll and carotenoid content of virgin olive oils. The study was conducted in Spain. Colour was evaluated through the chromatic ordinates L, a, b of the CIELAB colorimetric system. The results indicate that oils of regulated deficit irrigation did not show differences in pigment content and colour parameters.
