Effect of pre-drying treatments and drying methods on the quality of dried tomato slices

The aim of this investigation was to study the effects of pre-drying treatments using some additives such as starch, malto-dextrin, potassium metabisulfite and sodium chloride, as well as drying methods (solar drier and/or oven drying), on the drying characteristics and quality attributes of dried tomatoes.
