Continuing globalisation that is oriented towards the large-scale production means, in most cases, disestablishing of small plants. Industrial production with processing of 500 and more litres of milk daily uses new principles of production, automation of individual processes, and in the final consequence it leads to the cheaper products. The production processes ensure a high standard of hygiene at processing and minimization of hygienic risk.
