Apple fruit softening under controlled atmosphere: the potential role of cell wall enzymes

Journal of Food, Agriculture and Environment 2(3-4): 205-208

ISSN/ISBN: 1459-0263

The fruits of apples Golden Delicious were harvested at preclimacteric and climacteric stages of ripening and stored at 1 degrees C for six months under conventional cold (Cold; 0.03% CO2 and 21% O2), controlled atmosphere (CA; 3% CO2 and 3% O2) and ultra low oxygen (ULO; 3% CO2 and 1% O2) conditions. Maximum retention of fruit firmness was observed under ULO followed by CA and cold storage conditions.
