Changes of cell-wall polysaccharides and their catabolic enzyme activities of persimmon fruits during post-harvest

Fruit firmness, cell wall components and catabolic enzyme activities in postharvest persimmon Fuping Jianshi fruits collected from Fuping Xian County in Shaanxi, China and stored at room temperature were determined. After the fruits were harvested, the firmness of the flesh continuously declined, with its average daily decrement reaching 3.1%. The highest reduction in flesh firmness (6.3% average decrease per day) was recorded between the seventh day and sixteenth day of postharvesting.
