Composition and energy content of meat products from Thuringia: 2. Mineral substance and common salt

The salt content of 191 meat products from 13 producers (6 of them industrially, 7 by crafts) was investigated. The products represented 18 known and thus frequently sold products, i.e. 5 sorts of raw sausage and 5 ones of sausage from cooked meat and 4 sorts of cooked sausage (bologna type and meat loaf) and 4 ones of pieceable cured products.
