Determining equilibrium moisture content isotherms for pistachio and proposing appropriate mathematical models for predicting the EMC in three Iranian pistachio cultivars

The desorption isotherms and equilibrium moisture content (EMC) of nuts of Iranian pistachio cultivars Ohadi, Kalleghoochi and Abdollahi were determined using the gravimetric method at 25, 37 and 50 degrees C over a range of relative humidities from 0.11 to 0.85%. Five mathematical models (Chung-Pfost, Halsey, Henderson, Oswin and Smith) were used to analyse the resulting data.
