Abstract
A field experiment was conducted in Poland during 1984-94 to investigate the effect of N fertilizer application (at 0, 60, 120 and 180 kg/ha) on the amino acid composition of winter barley grain protein. N at 120 kg/ha reduced amino acid content, particularly exogenous ones, compared to the control. The total amount of amino acids in barley grain protein decreased from 893.2 g/kg in the control to 846.1 g/kg with N at 180 kg/ha.
