Fifty three samples of honey from four species of honey bees, viz. Apis cerana F., A. mellifera L. A. dorsata L. and A. florea L., collected from Himachal Pradesh and adjoining states of Punjab and Haryana were analyzed for some important physico-chemical characters. Moisture content of honey ranged from 16.22 to 18.87% and total reducing sugars from 63.62 to 64.84%. The mineral contents of honey were high in honey samples from A. dorsata (0.33%) compared with those from other honey bee species (0.20-0.24%). Fiehe's test was negative for all the samples.
