Chemical composition of unifloral, stored and commercial Apis mellifera L. honeys

Chemical composition of unifloral, stored and commercial Apis mellifera L. honeys

Journal of Food Science and Technology Mysore 42(6): 492-495

The chemical composition of 8 commercial honey samples, 4 each of unifloral and stored honey was evaluated. Among the commercial honey samples, 5 showed significantly low range values of specific gravity, reducing sugars and high range of acidity compared to the values prescribed by BIS.
