Dietary fiber from spent coconut residue

Indian Coconut Journal 36(10): 3-9

In this paper, the process for the production of dietary fibre from partially defatted coconut is outlined. The effects of processing treatments, solvent extraction, fat content and particle size on the hydration properties (water holding capacity, water retention capacity and swelling capacity) of dietary fibre, as well as the effect of particle size on fat absorption capacity are discussed.
