Effect of pre treatments on quality characteristics of selected varieties of frozen green Bengal gram (Cicer arietinum)

The two varieties of green Bengal gram, namely, ICCV-2 and G-5 were subjected to pre-treatment such as blanching followed by air blast freezing (-20 degrees c) and then storing under deep freezing condition (-30 degrees c). The per cent retention of total chlorophyll was more in G-5 sample blanched with ammonium bicarbonate during freezing and frozen storage.
