Microbiological evaluation of chicken salad and egg salad served in self-service restaurants in the city of Rio de Janeiro

During April 2002-February 2003, 135 samples of chicken salads and 135 samples of egg salads obtained from self-service restaurants in Rio de Janeiro, Brazil, underwent microbiological evaluation (Staphylococcus counts, most probable number of fecal and total coliforms, and presence of Salmonella).
