Mobile vinificator - VINIMOB for the production of Malvazija istarska wine

The influence of pre-fermentative cryomaceration on the extraction of varietal aroma compounds (monoterpenes) and dry extract contents of 'Malvazija istarska' wine was studied. Also, the advantages of the 'VINIMOB' system for primary grape processing as compared to the usual treatments were studied. Grapes were crushed and destemmed in 'VINIMOB'. Approximately 200 litres of grape pomace were separated as control treatment.
