Ribonucleoside contents in sheep and goat milk

Ribonucleoside contents in sheep and goat milk

Kieler Milchwirtschaftliche Forschungsberichte 57(1): 21-32

Ribonucleosides, in minor constituents, belong to the non-protein-nitrogen fraction of milk. In previous studies, ribonucleoside patterns were determined in bovine milk in relation to the lactation time. Furthermore, ribonucleoside contents and the changes occurring during heat treatment of cow milk were recorded. In the present work, the contents of 9 unmodified and modified ribonucleosides in bulk milk samples from sheep and goat raw milk over a period of ~6 months are presented.
