A flavonoid hesperidin is reported to inhibit chemically induced mouse and rat carcinogenesis in several organs, such as stomach, tongue, colon, and urinary bladder. We recently synthesized hesperidin glycoside (Hsp-Gn) by cyclodextrin glucanotransferase from hesperidin to improve its solubility.
