Using highly expanded citrus fiber to improve the quality and nutritional properties of foods

The typical analytical composition of highly expanded citrus fibre is summarized. The role of highly expanded citrus fibres in controlling syneresis by reducing free oil or water in the product is outlined. The use of citrus fibres to effectively mimic fat characteristics without imparting the negative effects on flavour, colour, volume, and texture often associated with reduced-fat products is discussed.
