A screening of the formation of C6-volatiles in homogenized leaves from vine, tobacco, spinach, chicory, leek, lettuce, endive, cabbage, savoy, feeding turnip, kohlrabi and radish was carried out. With concentrations > 50 mg/kg (fresh weight) leaf homogenates from vine, tobacco, kohlrabi, radish and endive were shown to be very active in C6-aldehyde formation. Among the last-mentioned tissues the formation of C6-volatiles from endive was studied in more detail. It was demonstrated that hydroperoxide lyase is bound, probably as an extrinsic enzyme, to the thylakoid membrane of chloroplasts.
