Analytical study of the components of the fiber fraction of foods of plant origin experiment with legume seeds

A methodology for the determination of the components of the dietary fiber, for the finding of biological significance of these fractions, was studied. The methods of ADF (acid detergent fiber) were combined, and specific determinations of pectin and nutritive protein or carbohydrates entrained in the insoluble portion were completed. Grains of the leguminous plants Phaseolus vulgaris L., Vigna sinensis Endl. and Cicer arietinum L. were tested, owing to the fact that they are considered as an outstanding material in the research linked to the capacity of the fiber in lowering the serum cholesterol levels [in humans]. Several solutions are drawn.
