Antibacterial effect of the lactoperoxidase thiocyanate hydrogen peroxide lp system on the activity of thermophilic starter culture

The lactoperoxidase/thiocyanate/hydrogen peroxide (LP) system strongly reduced the activity of thermophilic starter cultures. A delay of 4.5 h in coagulation time was observed with cultures inoculated into milk after 2 h of reactivation of the LP system. The minimum concentration of SCN-:H2O2 required to activate the system and to provide effective inhibition of the culture was found to be 0.15:0.10 mM. No differences were observed when using a higher dose of e.g. 0.25 mM of each. When milk was inoculated 6 h after the activation of the LP system, the cultures attained practically the same coagulation time as in untreated milk, although the ratio of cell number to aid produced was still depressed in the former case. This delay in bacterial growth can probably not be ascribed to the reactivation of the LP system by the starter culture.
